Salad
Using Mills Family Farms Green Cascade Mix®

Yields 6 Salads
Ingredients:
2 Cups Mills Family Farms Green Cascade Mix®
¼ Cup Thinly Sliced Red Onion
¼ Cup Dried Cranberries
¼ Cup Candied Almonds*
¼ Cup Thinly Sliced Red Radish
¼ Cup Mandarin Orange Segments (Drained)
¼ Cup Crumbled Feta Cheese
In Large mixing bowl toss Mills Family Farms Green Cascade Mix® with appropriate amount of dressing and red onion, mix well coating all leaves. Arrange in large serving bowl and scatter cranberries, almonds, radish and mandarin orange segments on top of salad reserving crumbled feta to garnish each salad when plating.
Candied Almonds:
1 Cup Chopped Almonds (any nut may be substituted)
1/4 Cup Powdered Sugar
A dash of Cayenne Pepper
1/2 t. Chili Powder
3 Cups Canola Oil for Frying @ 375 degrees
In Large Saucepan bring to a boil, 4 cups water and chopped almonds. Strain and let dry 2 minutes in colander. In a large mixing bowl mix remaining ingredients and toss the boiled almonds in the sugar mixture to coat well. Fry in 2 batches and be careful not to burn. Once Almonds are golden brown spread out on sheet pan lined with wax paper and let cool at room temperature do not refrigerate or nuts will get soggy! And No one wants soggy Nuts!

Aged Balsamic Vinaigrette:
1 Cup good aged balsamic vinegar
1T. Minced Garlic
1T. Minced Shallot
1T. Minced Fresh Basil Leaves
1T. Dijon Mustard
2t. Soy Sauce
3T. Seasoned Rice Vinegar
3T. Honey
1t. Cracked Black Pepper
1Cup Extra Virgin Olive Oil
Kosher Salt to Taste
In large mixing bowl whisk together all ingredients, less the olive oil. When well mixed slowly whisk in olive oil in slow steady stream to gently emulsify the vinaigrette. Adjust seasoning if necessary and refrigerate till ready to serve.
