In a Garlic Chive Emulsion with Oven Dried Tomatoes, Fried Caper Blossoms, shaved Asaigo and sourdough crisps.

Ahi Salad Image(Yield 50)

Ingredients:

4 – Boxes Mills Family Farms Hand Torn Romaine torn into bits size pieces.
1 – Batch garlic chive emulsion
1 – Batch Oven Dried Tomatoes
1 – Batch Caper Blossoms
1 – Batch Shaved Asiago cheese
1 – Batch Sourdough Crisps

Garlic Chive Emulsion

4 – Cups Roasted Garlic Cloves.
2 – Cups Raw Garlic Cloves.
48 oz – Fresh Lemon Juice.
20 – Egg Yolks
6 – Cups Red Wine Vinegar
1 – Bottle 10 oz Worcestershire Sauce
2 – Cups Dijon Mustard
2 – Gallons Olive Oil/Canola Blend
6T – Cracked Black Pepper
4T – Kosher Salt
8 – Cups Grated Romano Cheese
4 – Cups Finely Sliced Chives

Blend first seven ingredients in bucket with buerre mixer, slowly ad oil and the remaining ingredients.  Taste and adjust ingredients if necessary.

Oven Dried Tomatoes

25 – Roma Tomatoes quartered
½ cup – Minced Garlic
1 – Cup Olive oil
3T – Minced Oregano
3T – Kosher Salt
3T – Ground Black Pepper
3T – Sugar

Place Tomatoes and all remaining ingredients in a large bowl and toss, well coating and thoroughly mixing.  Place Tomatoes in a single layer on a sheet pan and place in a 225° oven for 6 hours.  Reserve for building Salad.

Fried Caper Blossoms

2 – Jars Nonpareil Capers Drained
370° Oil

In a fire wire hand held colander, place capers into oil and fry 1 -2 minutes until golden brown and crisp.  Remove from oil and drain on a layer of Paper towels.  Reserve for building salad.

Shaved Asiago Cheese

3lb – Shaved Asiago Cheese
On a Slacer, thinly slice cheese.  We are looking for paper thin slices.

Sourdough Crisps

5 – Sourdough Baguettes (Frozen)
3 cups – Olive Oil
1lb – Salted Butter
½ cup – Chopped Garlic
4T – Dried Time
4T – Black Pepper (Ground)
3T – Kosher Salt
4T - Paprika

Using a slicer, slice frozen baguette into 1/8th inch chips.  In medium saucepan heat olive oil, butter and all remaining ingredients.  Mix well until butter is melted and well mixed.  In large bowl toss chips and Oil mixture.  Toss, well coating all bread thoroughly and spread onto 4 sheet pans and bake for 15 minutes at 350° or until crisp and golden brown.
