Mills Family Farms Cascade Salad with Tandoori Spiced Chicken, Cous Cous & Dried Apricots in a Citrus, Curry VinaigretteServes 6

Ingredients:
¼ t. Cayenne Pepper
2# Mills Family Farms Wholeaves® Green Cascade Mix®
4 Boneless Skinless Chicken Breasts
2 T. Honey
2 T. Chili Powder
1 t. Cumin Powder
1 T. Ground Mustard Seed
1 t. Salt & Pepper

Combine ingredients above and let marinate 10 minutes to two hours.

2 T. Yellow Mustard
2 T. Honey
2 T. Orange Juice
1 T. Lemon Juice
2 t. Minced Shallot
4 T. Rice Vinegar
2 T. White Wine Vinegar
2 T. Toasted Curry Powder
1t. Salt & Pepper
¾ C. Extra Virgin Olive Oil

Combine the ingredients above in medium bowl and Mix well to make Vinaigrette, Slowly Incorporating the Olive Oil in a slow steady stream.

½ # Dried Apricots Julienne
1 C. Cous Cous ( Cooked according to recipe on box )
½ C. Toasted Almonds

Over medium hot grill, grill off chicken breasts till done, Let Cool, When cool, Thinly slice the Chicken Breast. In a large bowl toss together Mills Family Farms Cascade lettuce, Apricots, Cous Cous, Almonds, and Chicken. Drizzle with dressing and toss.
