Black Pepper Seared Ahi Tuna Nicoise Salad

Serves 6-8
Ingredients:
24 Wholeaves® Romaine Hearts
2lb. fresh Ahi tuna (#1 Sashimi Grade)
2 tablespoons cracked black pepper
2 tablespoons Kosher salt
2 tablespoons cracked fennel seeds
2 tablespoons oil
Dressing:
1 tablespoon minced anchovies
1 tablespoon minced shallots
1 tablespoon Dijon mustard
2 tablespoons minced capers
2 tablespoons minced garlic
1 tablespoon red wine vinegar
1/4 cup red wine vinegar
1 cup extra virgin olive oil
1 tablespoon cracked black pepper
1 tablespoon Kosher salt
Mix all dressing ingredients in a medium mixing bowl whisk together until
well incorporated.
Components:
6 soft boiled eggs (10 minutes)
2 ea. red and yellow bell peppers roasted
6 potatoes quartered and roasted
6 baby artichokes steamed and quartered - (marinated in jar will work)
1 basket sweet 100 tomatoes tossed in olive oil and seasoned
6-8 garlic rubbed Crostini
Roll tuna in pepper, salt and fennel seeds, then in
a hot pan with the oil sear on each side for about 30 seconds. Reserve
fish at room temperature and finish salad.
Toss Mills Family Farms Wholeaves® Green Cascade Mix® in a bowl
with desired amount of dressing. Once well tossed arrange on individual
plates for a more elegant affair or on a platter for more of that rustic
family style occasion. Either way this makes a beautiful salad your guests
and family are sure to love. To finish our presentation simply arrange
the components over the salad. Slice the Ahi tuna into thin slices and
place on top of the salad and serve immediately to ensure crispness.
