Prosciutto and Sauteed Mills Family Farms Wholeaves® Sandwich

Sauteed Mills Family Farms Wholeaves®
12 to 14 Mills Family Farms Wholeaves® green leaf, rolled then julienne sliced
2-3 cloves or garlic, peeled and chopped
Dash hot pepper
2-3 anchovy fillets, chopped
1/2 cup raisins 8 green pitted olives, chopped
Capers, to taste
Olive oil
Salt
Freshly ground black pepper

In heavy skillet heat oil. Saute lettuce for 2-3 minutes or until soft. Add remaining ingredients being sure to cook until anchovies are melted. Adjust seasonings

Sandwich
2 Italian sandwich rolls, split length-wise
Good quality olive oil
8-10 sliced lean prosciutto or fresh baked whole leg smoked ham
Freshly ground black pepper

Drizzle bread with a hearty amount of olive oil. Divide meat and place on 1 side of each roll. Top with sauteed Wholeaves®. Pepper lightly. Garnish with fresh Wholeaves® green leaf and sliced tomato (optional).
